Chicken Feet Soup

Chicken Feet Soup is a rich, collagen-packed dish that’s popular in many cuisines, particularly in Chinese, Filipino, and Jamaican cooking. It’s nutritious, comforting, and full of flavor. Here’s a basic recipe for Chinese-style Chicken Feet Soup (you can let me know if you’d prefer another regional style!):


🥣 Chinese Chicken Feet Soup with Herbs

🐔 Ingredients:

  • 1 lb (450g) chicken feet (cleaned and nails trimmed)

  • 10 cups water

  • 6–8 dried red dates (jujubes)

  • 1 piece dried tangerine peel (optional)

  • 1 small piece of ginger (sliced)

  • 2 cloves garlic (lightly smashed)

  • 1 piece of dried goji berries (a small handful)

  • Salt to taste

  • Optional: Chinese herbs like dang gui (angelica root), codonopsis, or yu zhu (Solomon’s seal)

🧼 Preparation:

  1. Clean the chicken feet thoroughly. Trim the nails and blanch them in boiling water for 3–5 minutes to remove impurities.

  2. Drain and rinse the feet under cold water.

🍲 Cooking:

  1. In a large pot, add the chicken feet, 10 cups of water, ginger, garlic, red dates, and tangerine peel.

  2. Bring to a boil, then reduce to a simmer.

  3. Simmer for 1.5 to 2 hours until the broth is rich and the chicken feet are tender.

  4. Add goji berries in the last 10 minutes.

  5. Season with salt to taste.

🍽️ To Serve:

Serve hot as a starter or alongside rice. The soup is often sipped for its medicinal and beauty benefits (collagen-rich!).
