Chicken Casserole

Here’s a classic Chicken Casserole recipe that’s comforting, easy to make, and perfect for weeknights or a family gathering.


🥘 Classic Chicken Casserole Recipe

Cook Time: 45 minutes
Total Time: 1 hour


🧄 Ingredients:

  • 2 tbsp olive oil or butter

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 3-4 boneless, skinless chicken breasts (or thighs), diced

  • 2 cups mixed vegetables (frozen or fresh: peas, carrots, corn, green beans)

  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup

  • 1/2 cup chicken broth or milk

  • 1 cup shredded cheddar cheese (plus extra for topping, optional)

  • 1/2 tsp thyme or Italian seasoning

  • Salt and pepper, to taste

  • 2 cups cooked rice, pasta, or cubed potatoes

  • Optional topping: crushed Ritz crackers or breadcrumbs mixed with melted butter


🔪 Instructions:

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C).

  2. Cook Chicken:
    In a large skillet, heat oil or butter over medium heat. Add the chicken and cook until no longer pink (about 5–7 minutes). Remove and set aside.

  3. Sauté Vegetables:
    In the same skillet, add onions and garlic. Cook for 2–3 minutes until soft. Add in the mixed vegetables and cook another 3–4 minutes if fresh (skip this step if using frozen and precooked veggies).

  4. Mix Casserole:
    In a large bowl, combine the cooked chicken, vegetables, soup, broth or milk, shredded cheese, seasoning, and cooked rice/pasta/potatoes. Mix well. Add salt and pepper to taste.

  5. Assemble & Bake:
    Pour mixture into a greased 9×13 inch baking dish. Top with extra cheese or a buttered breadcrumb/Ritz topping if desired.

  6. Bake:
    Bake uncovered for 25–30 minutes, or until hot and bubbly and the top is golden brown.
