1 medium onion, chopped

2 cloves garlic, minced

3-4 boneless, skinless chicken breasts (or thighs), diced

2 cups mixed vegetables (frozen or fresh: peas, carrots, corn, green beans)

1 can (10.5 oz) cream of mushroom or cream of chicken soup

1/2 cup chicken broth or milk

1 cup shredded cheddar cheese (plus extra for topping, optional)

2 cups cooked rice, pasta, or cubed potatoes

Preheat Oven:
Preheat your oven to 375°F (190°C). -
Cook Chicken:
In a large skillet, heat oil or butter over medium heat. Add the chicken and cook until no longer pink (about 5–7 minutes). Remove and set aside. -
Sauté Vegetables:
In the same skillet, add onions and garlic. Cook for 2–3 minutes until soft. Add in the mixed vegetables and cook another 3–4 minutes if fresh (skip this step if using frozen and precooked veggies). -
Mix Casserole:
