Chicken and Avocado Salad

Here’s a fresh and healthy Chicken and Avocado Salad recipe that’s easy to make, perfect for lunch or a light dinner:


🥗 Chicken and Avocado Salad

Ingredients:

  • 2 cups cooked chicken, shredded or cubed (grilled or rotisserie works great)

  • 1 large ripe avocado, diced

  • 2 cups mixed greens (e.g., arugula, spinach, romaine)

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup cucumber, thinly sliced or chopped

  • 1/4 cup feta cheese (optional)

  • Fresh herbs (e.g., cilantro or parsley), chopped (optional)

Dressing:

  • 2 tbsp olive oil

  • 1 tbsp lemon juice or lime juice

  • 1 tsp Dijon mustard

  • 1 garlic clove, minced

  • Salt and pepper, to taste


🥣 Instructions:

  1. Prepare the dressing:
    In a small bowl, whisk together olive oil, lemon juice, mustard, garlic, salt, and pepper.

  2. Combine the salad:
    In a large bowl, combine chicken, avocado, mixed greens, cherry tomatoes, onion, cucumber, and feta (if using).

  3. Toss and serve:
    Pour the dressing over the salad and toss gently to combine. Garnish with herbs if desired.


✅ Tips:

  • Add hard-boiled eggs or bacon bits for extra protein.

  • Use grilled shrimp or tofu as an alternative protein.

  • Serve in a wrap or pita for a more filling meal.
