Cheesy zucchini steaks

Cheesy Zucchini Steaks Recipe

Ingredients:

  • 2 medium zucchinis

  • 1 cup shredded mozzarella cheese (or your favorite cheese blend)

  • 1/4 cup grated Parmesan cheese

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 teaspoon Italian seasoning (or a mix of dried basil, oregano, thyme)

  • Salt and pepper, to taste

  • Fresh parsley or basil for garnish (optional)

Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Prepare the zucchini: Wash the zucchinis and cut them into 1/2-inch thick slices, lengthwise or crosswise, whichever you prefer.

  3. Season: Lay the zucchini slices on a baking sheet lined with parchment paper or lightly greased. Brush both sides with olive oil, then sprinkle salt, pepper, minced garlic, and Italian seasoning evenly over the slices.

  4. Add cheese: Sprinkle shredded mozzarella evenly on each zucchini slice, then top with a little grated Parmesan.

  5. Bake: Place the baking sheet in the oven and bake for about 15-20 minutes, or until the zucchini is tender and the cheese is melted and bubbly.

  6. Broil (optional): For a golden, crispy cheese topping, turn on the broiler for 1-2 minutes at the end — but watch carefully so it doesn’t burn!

  7. Serve: Garnish with fresh parsley or basil if desired, and enjoy!
