🧀 Cheesy Vegetable Fritters
Ingredients (Makes about 10 fritters)

1 cup grated zucchini (squeeze out excess water)

1 cup grated carrot

½ cup corn kernels (fresh or frozen)

¼ cup chopped green onions (or regular onion, finely diced)

1 cup shredded cheese (cheddar, mozzarella, or a mix)

2 eggs

½ cup all-purpose flour (or chickpea flour for a gluten-free version)

¼ tsp baking powder (optional, for extra fluffiness)

Salt and pepper to taste

½ tsp garlic powder (optional)

½ tsp paprika or chili flakes (optional, for a bit of heat)

Olive oil or vegetable oil for frying

Prep the veggies:

Grate zucchini and squeeze out the moisture using a clean towel or paper towel.

Grate carrot and combine with zucchini in a large bowl.

Mix ingredients:

Add corn, green onions, cheese, eggs, flour, baking powder (if using), and seasonings.

Stir until everything is well combined. The mixture should be thick but scoopable. If too wet, add a bit more flour.

Fry the fritters:

Heat oil in a large non-stick skillet over medium heat.

Scoop heaped tablespoons of mixture into the pan, flattening them slightly with the back of the spoon.

Cook for 3–4 minutes per side, or until golden brown and cooked through.

Drain and serve:

Remove fritters and place on paper towels to drain excess oil.

Serve hot with sour cream, yogurt dip, ketchup, or your favorite sauce.
