Cheesy Ranch Potatoes & Smoked Sausage
Ingredients:
-
1.5 lbs baby potatoes (red, gold, or a mix), halved or quartered if large
-
1 lb smoked sausage (kielbasa or your favorite smoked sausage), sliced into 1/2-inch rounds
-
2 tablespoons olive oil
-
1 packet (1 oz) ranch seasoning mix (or homemade ranch seasoning)
-
1 1/2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
-
2 tablespoons fresh parsley (optional, for garnish)
-
Salt and pepper to taste
-
Optional: 1/2 teaspoon garlic powder or paprika for extra flavor
Instructions:
-
Preheat the Oven
Preheat your oven to 400°F (200°C). -
Prepare Potatoes
Wash and cut your baby potatoes. Toss them in a large bowl with olive oil, ranch seasoning mix, garlic powder/paprika (if using), and a pinch of salt and pepper. Make sure they’re well-coated. -
Arrange in Baking Dish
Spread the potatoes evenly in a large baking dish or sheet pan. Roast in the preheated oven for 25-30 minutes or until the potatoes start to get tender and slightly golden. -
Add Sausage
Remove the baking dish from the oven. Scatter the sliced smoked sausage evenly over the potatoes. Return to oven and bake for another 10-15 minutes until the sausage is heated through and the potatoes are fork-tender. -
Add Cheese
Sprinkle the shredded cheese evenly over the top of the potatoes and sausage. Return the dish to the oven for 5-7 minutes or until the cheese is melted and bubbly. -
Garnish and Serve
Remove from the oven and sprinkle with chopped fresh parsley for color and freshness. Serve hot!
Tips:
-
You can add veggies like bell peppers, onions, or broccoli for more color and nutrition.
-
If you want extra crispy potatoes, toss them in a little more oil and roast uncovered.
-
Use smoked gouda or pepper jack cheese for a flavor twist.
