Ingredients:

3 cups mashed potatoes (preferably cold)

1 cup cheddar cheese (shredded or cut into small cubes)

1/4 cup chopped green onions (optional)

1/2 tsp garlic powder

1/2 tsp black pepper

Salt to taste
For Coating:

1/2 cup all-purpose flour

2 eggs (beaten)

1 cup breadcrumbs (panko for extra crunch)

Oil for deep frying
Instructions:

Prepare the Potato Mixture:

In a large bowl, mix mashed potatoes, green onions (if using), garlic powder, pepper, and salt.

Take about 2 tablespoons of the mixture and flatten it in your hand.

Place a small cube or spoonful of cheese in the center and shape into a ball, fully enclosing the cheese.

Repeat for the rest of the mixture.
