Cheesy Mashed potato puffs

Cheesy mashed potato puffs are a delicious and fun twist on regular mashed potatoes! They’re crispy on the outside, soft and cheesy on the inside—perfect as a side dish or snack. Here’s a simple recipe for you:

Ingredients:

  • 4 cups mashed potatoes (preferably made from scratch, cooled)

  • 1 cup shredded cheddar cheese (or your favorite cheese)

  • 2 large eggs

  • 2 tablespoons butter, melted

  • 1/4 cup grated Parmesan cheese (optional)

  • 1/4 cup green onions, chopped (optional for extra flavor)

  • Salt and pepper, to taste

  • 1/2 cup breadcrumbs (for coating)

  • Olive oil spray (for crisping)

Instructions:

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.

  2. Prepare the Mashed Potatoes:
    If you don’t already have mashed potatoes, mash your boiled potatoes until smooth. Let them cool down to room temperature. (This helps the puffs hold their shape.)

  3. Mix the Ingredients:
    In a large bowl, combine the cooled mashed potatoes, shredded cheddar cheese, eggs, melted butter, Parmesan cheese, green onions (if using), salt, and pepper. Mix until well combined.

  4. Shape the Puffs:
    Using your hands or a spoon, shape the potato mixture into small, round balls (about 1-2 inches in diameter). You can also shape them into little mounds if you prefer.

  5. Coat with Breadcrumbs:
    Place the breadcrumbs in a shallow bowl. Gently roll each potato ball in the breadcrumbs until fully coated.

  6. Bake:
    Arrange the potato puffs on the prepared baking sheet. Lightly spray them with olive oil to help them get crispy. Bake for 20-25 minutes, or until golden brown and crispy on the outside.
