Cheesy Mashed Potato and Beef Casserole

Ingredients:

  • For the mashed potatoes:

    • 4 large potatoes (Yukon Gold or Russet), peeled and cubed

    • 4 tbsp butter

    • 1/2 cup milk (or cream for extra richness)

    • 1 cup shredded cheddar cheese (plus extra for topping)

    • Salt and pepper to taste

  • For the beef filling:

    • 1 lb (450g) ground beef

    • 1 medium onion, finely chopped

    • 2 cloves garlic, minced

    • 1 cup frozen peas and carrots (optional)

    • 1/2 cup beef broth or stock

    • 2 tbsp tomato paste or ketchup

    • 1 tsp Worcestershire sauce

    • 1 tsp dried thyme or Italian seasoning

    • Salt and pepper to taste

    • 2 tbsp olive oil or vegetable oil

  • To assemble:

    • 1 cup shredded cheddar cheese (for topping)

    • Fresh parsley or chives, chopped (optional garnish)


Instructions:

  1. Make the mashed potatoes:

    • Boil the peeled and cubed potatoes in salted water until tender (about 15 minutes).

    • Drain and mash with butter and milk until smooth and creamy.

    • Stir in 1 cup shredded cheddar cheese.

    • Season with salt and pepper. Set aside.

  2. Prepare the beef filling:

    • In a large skillet, heat oil over medium heat.

    • Add the chopped onion and garlic; sauté until translucent and fragrant (about 3-4 minutes).

    • Add ground beef, breaking it up with a spoon, and cook until browned and no longer pink.

    • Stir in peas and carrots if using.

    • Mix in tomato paste (or ketchup), Worcestershire sauce, thyme, salt, and pepper.

    • Pour in beef broth and let simmer for 5-7 minutes, until slightly thickened.

    • Taste and adjust seasoning.

  3. Assemble the casserole:

    • Preheat oven to 375°F (190°C).

    • In a baking dish (about 9×13 inches), spread the beef mixture evenly.

    • Layer the cheesy mashed potatoes on top of the beef mixture, spreading it evenly.

    • Sprinkle extra shredded cheddar cheese on top.

  4. Bake:

    • Bake uncovered for 20-25 minutes or until the top is golden and bubbly.

    • If you want an extra crispy top, you can broil for an additional 2-3 minutes (watch carefully to avoid burning).

  5. Serve:

    • Let the casserole cool for a few minutes.

    • Garnish with chopped parsley or chives if desired.

    • Serve warm and enjoy!
