Cheesy Ground Beef and Rice Casserole

Here’s a simple and delicious Cheesy Ground Beef and Rice Casserole recipe for you! It’s hearty, flavorful, and perfect for a family meal.

Ingredients:

  • 1 lb ground beef

  • 1 cup uncooked long-grain white rice (or brown rice for a healthier twist)

  • 2 cups beef broth (or chicken broth if you prefer)

  • 1 can (15 oz) diced tomatoes (drained)

  • 1 can (4 oz) diced green chilies (optional, for a mild heat)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 tsp ground cumin (optional for extra flavor)

  • 1 tsp paprika

  • Salt and pepper, to taste

  • 2 cups shredded cheddar cheese (or a blend of cheddar and Monterey Jack)

  • 1 tbsp olive oil (or butter)

Instructions:

  1. Cook the ground beef:

    • In a large skillet, heat the olive oil over medium heat. Add the ground beef, breaking it up with a spoon, and cook until browned, about 5-7 minutes. Drain any excess fat.

  2. Sauté the veggies:

    • To the same skillet, add the diced onion and garlic. Sauté for about 2-3 minutes until softened.

  3. Add seasonings and tomatoes:

    • Stir in the oregano, cumin, paprika, salt, and pepper. Add the diced tomatoes (drained) and the green chilies if you’re using them. Mix everything well and cook for an additional 2 minutes.

  4. Cook the rice:

    • Add the uncooked rice to the skillet, followed by the beef broth. Stir to combine. Bring the mixture to a simmer, cover, and reduce heat to low. Let it cook for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.

  5. Assemble the casserole:

    • Preheat your oven to 350°F (175°C). Once the rice is cooked, transfer the mixture into a greased 9×13-inch casserole dish. Sprinkle the shredded cheese evenly over the top.

  6. Bake:

    • Cover the casserole with aluminum foil and bake for 15 minutes. After 15 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

  7. Serve:

    • Once done, remove from the oven and let it sit for a few minutes before serving. Garnish with fresh parsley or cilantro if desired.


Tips:

  • Make it spicy: Add some chopped jalapeños or a dash of hot sauce to bring more heat to the dish.

  • Add vegetables: You can mix in peas, corn, or bell peppers for some extra color and nutrients.

  • Make it ahead: This casserole is perfect for meal prep! You can assemble it the night before and bake it when you’re ready to eat.
