Cheesy Beef Taco Pasta

Here’s a Cheesy Beef Taco Pasta recipe that’s quick, hearty, and perfect for a weeknight dinner:


🌮 Cheesy Beef Taco Pasta

🕒 Total Time: 30 minutes | 🍽️ Serves: 4-6


Ingredients:

  • 1 lb (450g) ground beef

  • 1 small onion, diced

  • 2–3 cloves garlic, minced

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • 1 can (10 oz) Rotel (diced tomatoes with green chilies)

  • 1/2 cup salsa (your preferred spice level)

  • 2 cups beef broth

  • 8 oz (about 2½ cups) uncooked pasta (small shapes like rotini, shells, or penne)

  • 1 cup shredded cheddar cheese

  • 1 cup shredded Monterey Jack cheese

  • 1/2 cup sour cream (optional, for creaminess)

  • Salt and pepper, to taste

  • Chopped cilantro or green onions, for garnish


Instructions:

  1. Brown the beef:
    In a large skillet or sauté pan over medium-high heat, cook the ground beef until browned. Drain excess grease if needed.

  2. Add aromatics:
    Add diced onion and garlic. Cook for 2–3 minutes until softened and fragrant.

  3. Season it:
    Stir in taco seasoning, Rotel, salsa, and beef broth. Mix well.

  4. Add pasta:
    Stir in the uncooked pasta. Bring to a boil, then reduce heat to low. Cover and simmer for 12–15 minutes, or until pasta is tender, stirring occasionally.

  5. Make it cheesy:
    Stir in the shredded cheeses and sour cream (if using) until melted and creamy.

  6. Season & serve:
    Taste and adjust salt and pepper. Garnish with chopped cilantro or green onions.


💡 Optional Add-Ins:

  • Black beans or corn

  • Jalapeños for extra heat

  • Crushed tortilla chips on top for crunch
