Cheeseburger Soup

Here’s a hearty and delicious Cheeseburger Soup recipe that brings all the flavors of a cheeseburger into a warm, creamy bowl:


🍔 Cheeseburger Soup

Servings: 6-8
Prep Time: 15 minutes
Cook Time: 30-40 minutes
Total Time: ~45 minutes


🧀 Ingredients:

  • 1 lb ground beef

  • 3/4 cup chopped onion

  • 3/4 cup shredded carrots

  • 3/4 cup diced celery

  • 1 tsp minced garlic

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 4 tbsp butter, divided

  • 3 cups diced potatoes (peeled, if desired)

  • 3 cups chicken broth

  • 1/4 cup all-purpose flour

  • 2 cups milk

  • 2 cups shredded cheddar cheese

  • 1/2 cup sour cream (optional, for creaminess)


🍲 Instructions:

  1. Cook the beef:
    In a large pot or Dutch oven, brown the ground beef over medium heat. Drain and set aside.

  2. Sauté vegetables:
    In the same pot, melt 1 tablespoon of butter. Add onion, carrots, celery, and garlic. Cook until vegetables are tender (about 5–7 minutes).

  3. Add potatoes and broth:
    Return the beef to the pot. Add potatoes, salt, pepper, and chicken broth. Bring to a boil, then reduce heat and simmer, covered, for 10–15 minutes or until potatoes are soft.

  4. Make the roux:
    In a small saucepan, melt the remaining 3 tablespoons of butter over medium heat. Whisk in flour and cook for 1–2 minutes until golden and bubbly. Slowly whisk in the milk. Cook until thickened.

  5. Combine and simmer:
    Add the milk mixture to the soup. Stir in shredded cheese until melted and smooth. Simmer for another 5–10 minutes. Do not boil once the cheese is added.

  6. Finish with sour cream (optional):
    Stir in sour cream just before serving for added creaminess.


🥓 Optional Add-ins & Toppings:

  • Cooked crumbled bacon

  • Chopped pickles

  • Extra shredded cheese

  • Toasted hamburger bun croutons

  • A dash of hot sauce or Worcestershire sauce for depth
