Cheese Tortellini Pepperoni Pizza Casserole

Ingredients:

  • 1 package (about 9-12 oz) refrigerated cheese tortellini (or frozen, thawed)

  • 2 cups marinara sauce (store-bought or homemade)

  • 1 cup sliced pepperoni (or more if you love pepperoni)

  • 2 cups shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • 1 teaspoon Italian seasoning (optional, for extra flavor)

  • 1/2 teaspoon garlic powder (optional)

  • 1/4 teaspoon crushed red pepper flakes (optional, for some heat)

  • Fresh basil or parsley (optional, for garnish)

  • Olive oil or non-stick spray (for greasing the casserole dish)


Instructions:

  1. Preheat Oven:

    • Preheat your oven to 375°F (190°C).

  2. Cook Tortellini:

    • If using refrigerated tortellini, boil them in salted water according to package instructions (usually 2-3 minutes). If frozen, cook a minute longer or follow package directions.

    • Drain and set aside.

  3. Mix Ingredients:

    • In a large mixing bowl, combine the cooked tortellini, marinara sauce, Italian seasoning, garlic powder, and half of the mozzarella cheese.

    • Stir gently to coat everything evenly.

  4. Prepare Casserole Dish:

    • Lightly grease a 9×13 inch baking dish with olive oil or non-stick spray.

    • Spread half of the tortellini mixture evenly in the dish.

  5. Add Pepperoni and Cheese:

    • Layer half of the sliced pepperoni on top of the tortellini mixture.

    • Sprinkle half of the remaining mozzarella cheese and some Parmesan cheese over the pepperoni.

  6. Add Remaining Tortellini Mixture:

    • Spread the remaining tortellini mixture over the pepperoni and cheese layer.

    • Top with the rest of the pepperoni and the remaining mozzarella and Parmesan cheese.

  7. Bake:

    • Cover the dish with foil and bake for about 20 minutes.

    • Remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and golden.

  8. Garnish and Serve:

    • Remove from oven and let it cool slightly.

    • Garnish with fresh basil or parsley if desired.

    • Serve warm and enjoy!
