Here’s a recipe for a Cheddar Bay Biscuit Seafood Pie — a rich, comforting seafood casserole topped with Red Lobster-style Cheddar Bay Biscuits. This dish blends creamy seafood filling with cheesy, garlicky biscuit topping. Perfect for a family dinner or holiday meal!

🧾 Ingredients

✨ For the Seafood Filling:

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 celery stalk, finely chopped (optional)

  • 1/4 cup all-purpose flour

  • 1 cup seafood stock (or chicken broth)

  • 1 cup heavy cream (or half-and-half)

  • 1 tsp Old Bay seasoning

  • Salt and pepper to taste

  • 1 tsp lemon juice

  • 1/2 cup frozen peas and carrots (optional)

  • 1/2 cup corn (optional)

  • 1/2 lb cooked shrimp, chopped

  • 1/2 lb cooked crab meat or imitation crab

  • 1/2 lb cooked scallops or white fish (optional)


🧀 For the Cheddar Bay Biscuit Topping:

  • 1 packet Red Lobster Cheddar Bay Biscuit Mix (or see homemade version below)

  • 1/2 cup cold water (for mix)

  • 3/4 cup shredded sharp cheddar cheese

  • 1/2 tsp garlic powder (if using homemade mix)

  • 2 tbsp butter (for brushing on top)

  • 1/2 tsp dried parsley (for topping butter)


Optional Homemade Biscuit Mix (if not using the packet):

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp garlic powder

  • 1/2 cup cold unsalted butter, cubed

  • 3/4 cup buttermilk

  • 1 cup shredded cheddar cheese


🍳 Instructions

1. Prepare the Filling

  1. In a large skillet or saucepan, heat butter and olive oil over medium heat.

  2. Sauté the onion, garlic, and celery (if using) until soft and translucent (about 5 minutes).

  3. Sprinkle in the flour and stir constantly to form a roux (cook for 1–2 minutes).

  4. Gradually whisk in seafood stock and heavy cream. Bring to a simmer until thickened (about 3–4 minutes).

  5. Stir in Old Bay, lemon juice, salt, and pepper.

  6. Add peas, carrots, and corn (if using), and simmer for 2 minutes.

  7. Gently fold in all cooked seafood. Remove from heat and set aside.

🔥 Tip: Ensure seafood is cooked but not overcooked before adding — it’ll bake again in the oven.


2. Preheat the Oven

  • Preheat your oven to 400°F (200°C).


3. Make the Biscuit Topping

If Using Packet Mix:

  1. In a medium bowl, combine biscuit mix with cold water and cheddar cheese.

  2. Stir until just combined — don’t overmix.

If Making Homemade:

  1. Whisk dry ingredients in a bowl.

  2. Cut in cold butter until crumbly.

  3. Stir in buttermilk and cheese until just combined.


4. Assemble the Pie

  1. Pour the seafood filling into a greased 9×13-inch baking dish (or deep pie dish).

  2. Drop biscuit dough in large spoonfuls evenly over the top of the filling. Don’t flatten — they’ll spread slightly as they bake.


5. Bake

  • Bake for 20–25 minutes or until biscuits are golden brown and cooked through.


6. Brush with Garlic Butter

  1. Melt 2 tbsp butter and mix with parsley and a pinch of garlic powder.

  2. Brush over the hot biscuits right after removing from the oven.


7. Serve

Let cool for 5 minutes. Scoop and serve with a fresh green salad or steamed veggies!

  • Add Bacon: Stir cooked bacon bits into the filling for a smoky twist.

  • Make it Spicy: Add 1/4 tsp cayenne or a splash of hot sauce to the filling.

  • Use Lobster: Swap crab or scallops for cooked lobster for an elevated version.
