Cauliflower Tots — a healthier twist on classic tater tots!
Cauliflower Tots Recipe
Ingredients:

1 medium head of cauliflower (about 4 cups grated)

1 cup shredded cheddar cheese (or any cheese you prefer)

1/4 cup grated Parmesan cheese

1 large egg

1/2 cup breadcrumbs (panko or regular)

2 cloves garlic, minced (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon smoked paprika or regular paprika (optional)

Cooking spray or oil for baking
Instructions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the cauliflower:

Cut the cauliflower into florets and pulse in a food processor until finely grated (like rice).

Place the grated cauliflower in a microwave-safe bowl and microwave for 4-5 minutes until soft.

Let it cool slightly, then transfer the cauliflower to a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is important for crispy tots!

Mix ingredients:

In a large bowl, combine the squeezed cauliflower, shredded cheese, Parmesan, egg, breadcrumbs, garlic, salt, pepper, and paprika.

Mix until everything is well combined.

Shape the tots:

Using your hands or a small spoon, form the mixture into small tot shapes (about 2 inches long).

Place the tots on the prepared baking sheet.

Lightly spray the tots with cooking spray.

Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy on the outside.
