Ingredients:

  • 1 medium head of cauliflower, cut into florets

  • 2 large eggs

  • Β½ cup grated cheese (cheddar or parmesan work well)

  • ΒΌ cup chopped green onions (optional)

  • Β½ cup breadcrumbs or almond flour (for gluten-free)

  • 2–3 tablespoons flour (all-purpose or gluten-free)

  • 1–2 garlic cloves, minced

  • Salt and pepper to taste

  • Olive oil or vegetable oil for frying


Instructions:

  1. Steam or boil the cauliflower until tender (about 8–10 minutes). Drain and let cool slightly.

  2. Mash the cauliflower with a fork or potato masher. You want a rough mash, not too smooth.

  3. In a large bowl, combine mashed cauliflower, eggs, cheese, green onions, breadcrumbs, flour, garlic, salt, and pepper.

  4. Mix well until everything holds together. If the mixture is too wet, add more breadcrumbs or flour.

  5. Form into small patties or fritters using your hands or a scoop.

  6. Heat oil in a skillet over medium heat. Fry fritters for 3–4 minutes on each side until golden and crispy.

  7. Drain on paper towels and serve hot.
