Cassava Cake with Macapuno

Here’s a recipe for Cassava Cake with Macapuno — a delicious Filipino dessert that’s sweet, creamy, and coconut-flavored.

Ingredients:

For the Cassava Cake:

  • 2 cups grated cassava (fresh or frozen)

  • 1 cup coconut milk

  • 1 cup evaporated milk

  • 1 cup condensed milk

  • 2 large eggs

  • 1/2 cup butter, melted

  • 1/2 cup sugar (adjust to your sweetness preference)

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 1/2 cup macapuno strings (you can find this in jars at Filipino or Asian grocery stores)

For the Topping:

  • 1/2 cup macapuno strings (for topping)

  • 1/4 cup coconut milk

  • 1/4 cup sugar

Instructions:

1. Preheat the Oven:

Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan or an equivalent-sized dish.

2. Prepare the Cassava Cake Base:

  • In a large mixing bowl, combine the grated cassava, coconut milk, evaporated milk, and condensed milk. Stir until well mixed.

  • Beat the eggs and add them to the mixture along with the melted butter, sugar, vanilla extract, and salt. Mix well.

  • Fold in the macapuno strings into the mixture (reserving some for topping).

  • Pour the mixture into the prepared baking pan and smooth the top.

3. Bake the Cassava Cake:

  • Bake the cake for about 45–50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean. (Keep in mind that the texture should be moist and a little gooey in the center.)

4. Prepare the Topping:

  • While the cake is baking, prepare the topping by combining the macapuno strings, coconut milk, and sugar in a small saucepan over medium heat.

  • Stir the mixture and cook for about 5–7 minutes, or until it thickens slightly and becomes syrupy. Remove from heat and set aside.

5. Finish the Cake:

  • Once the cake is done, remove it from the oven and let it cool for a few minutes.

  • Pour the macapuno topping over the baked cassava cake and spread it evenly.

  • Return the cake to the oven for an additional 10–15 minutes or until the topping is set.

6. Cool and Serve:

  • Let the cake cool completely before cutting into squares. The cassava cake can be served at room temperature or chilled.
