Caramel Crunch Chocolate Ice Cream Cone
Ingredients:

For the Chocolate Ice Cream:

2 cups heavy cream

1 cup whole milk

¾ cup granulated sugar

½ cup unsweetened cocoa powder

4 oz bittersweet or semisweet chocolate, finely chopped

1 tsp vanilla extract

Pinch of salt

For the Caramel Crunch:

½ cup granulated sugar
-
2 tbsp water
-
2 tbsp unsalted butter
-
⅓ cup chopped roasted nuts (pecans, almonds, or peanuts)

Pinch of sea salt

For Assembly:

Chocolate or plain ice cream cones

Optional: melted chocolate or caramel sauce for drizzling

Instructions:

Make the Chocolate Ice Cream Base:

In a medium saucepan, whisk together sugar, cocoa powder, and salt.

Add milk and heavy cream, then heat over medium heat until it’s warm (not boiling).

Remove from heat, add chopped chocolate and vanilla extract. Stir until smooth.

Chill this mixture in the fridge for at least 4 hours or overnight.

Once chilled, churn in an ice cream maker according to manufacturer’s instructions.

Make the Caramel Crunch:

In a small saucepan, combine sugar and water over medium heat.

Cook without stirring until sugar dissolves and turns golden amber (about 5-7 minutes).

Remove from heat and quickly stir in butter until melted.

Add chopped nuts and a pinch of sea salt; stir to coat.

Pour caramel nut mix onto a parchment-lined baking sheet to cool and harden.
