Here’s a classic Cafeteria-Style Noodles recipe—simple, hearty, and nostalgic, often served as a side in Southern-style school cafeterias or meat-and-three diners. These are buttery, savory noodles, not spicy or saucy, and are perfect comfort food.


🥣 Cafeteria Noodles Recipe

Ingredients:

  • 12 oz. egg noodles (wide or homestyle)

  • 4 cups low-sodium chicken broth

  • 1 tablespoon chicken bouillon (optional, for richer flavor)

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • Salt & black pepper to taste

  • 4 tablespoons unsalted butter

  • Optional: 1 tablespoon parsley or chives for garnish


Instructions:

  1. Boil Broth:
    In a large pot, bring the chicken broth to a boil over medium-high heat. Stir in chicken bouillon (if using), garlic powder, and onion powder.

  2. Cook Noodles:
    Add the egg noodles to the boiling broth. Reduce heat to medium and cook uncovered, stirring occasionally, for about 10–12 minutes, or until noodles are tender. Do not drain.

  3. Add Butter:
    Once noodles are cooked, stir in the butter until fully melted and the noodles are coated.

  4. Simmer (Optional):
    Let the noodles sit for 3–5 minutes on low heat to thicken slightly. They will absorb more of the broth and become creamy.

  5. Season and Serve:
    Season with salt and black pepper to taste. Garnish with chopped parsley or chives if desired.

  • For Creamier Noodles: Add ¼ cup heavy cream or a splash of milk at the end.

  • Add Protein: Toss in shredded rotisserie chicken or diced ham for a full meal.

  • Use Frozen Egg Noodles: Like Reames, for an even more authentic, thick cafeteria texture.
