Here’s a delicious Buttery Cottage Cheese Herb Rolls recipe—soft, flavorful, and perfect as a side for soups, salads, or holiday meals.


🧈 Buttery Cottage Cheese Herb Rolls

Yields: ~12 rolls
Prep Time: 20 minutes (plus 1 hour rising)
Bake Time: 20–25 minutes


📝 Ingredients:

  • 1 cup cottage cheese (small curd works best)

  • ¼ cup unsalted butter, melted (plus more for brushing)

  • 1 package (2¼ tsp) active dry yeast

  • ¼ cup warm water (about 110°F)

  • 2 tbsp sugar

  • 1 tsp salt

  • 2 large eggs

  • 2½–3 cups all-purpose flour

  • 2 tbsp chopped fresh herbs (e.g., chives, parsley, dill, thyme – mix your favorites)

  • Optional: 1 garlic clove, finely minced (for extra flavor)


🥣 Instructions:

  1. Prepare Yeast Mixture
    In a small bowl, dissolve yeast in warm water with a pinch of sugar. Let sit for 5–10 minutes until foamy.

  2. Mix Wet Ingredients
    In a large mixing bowl, combine cottage cheese, melted butter, sugar, and salt. Add eggs one at a time and mix well.

  3. Combine & Knead
    Add yeast mixture to the bowl. Stir in 2½ cups of flour and herbs. Mix until a soft dough forms. If needed, add up to ½ cup more flour. Knead for 6–8 minutes by hand or 4–5 minutes with a mixer fitted with a dough hook—until smooth and elastic.

  4. First Rise
    Place dough in a lightly greased bowl, cover, and let rise in a warm place for 1 hour or until doubled.

  5. Shape Rolls
    Punch down the dough. Divide into 12 equal pieces and shape into balls. Place them in a greased 9×13-inch pan or on a parchment-lined baking sheet.

  6. Second Rise
    Cover and let rise again for 30–40 minutes.

  7. Bake
    Preheat oven to 375°F (190°C). Bake for 20–25 minutes, until golden brown.

  8. Finish with Butter
    Immediately brush hot rolls with melted butter and a sprinkle of extra herbs if desired.


🌿 Tips:

  • You can substitute dried herbs: use 2 teaspoons total instead of 2 tablespoons fresh.

  • Want a cheesy twist? Sprinkle grated Parmesan or cheddar on top before baking.

  • Leftovers freeze well—just reheat in the oven for 5–10 minutes at 300°F.
