Buffalo Chicken Lasagna with a Ranch Twist

Ingredients:

For the Chicken:

  • 3 cups cooked chicken, shredded (rotisserie chicken works great)

  • 1/2 cup buffalo wing sauce (like Frank’s RedHot)

  • 1/4 cup ranch dressing

For the Lasagna Layers:

  • 9 no-boil lasagna noodles (or regular, cooked according to package)

  • 2 cups shredded mozzarella cheese

  • 1 cup shredded cheddar cheese

  • 1 cup ricotta cheese

  • 1/2 cup cream cheese, softened

  • 1/2 cup ranch dressing (for layering)

  • 1/2 cup buffalo wing sauce (optional, for extra kick)

  • 1/4 cup chopped green onions (plus extra for garnish)

  • 1/4 cup chopped celery (optional, for crunch)

  • Salt and pepper to taste


Instructions:

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C).

  2. Prepare Buffalo Chicken:
    In a bowl, combine shredded chicken, buffalo wing sauce, and 1/4 cup ranch dressing. Mix until well coated.

  3. Make Creamy Cheese Mixture:
    In a separate bowl, mix ricotta cheese, cream cheese, 1/2 cup ranch dressing, salt, pepper, and half of the chopped green onions and celery.

  4. Assemble the Lasagna:

    • Spread a thin layer of ranch dressing on the bottom of a 9×13-inch baking dish.

    • Layer 3 lasagna noodles over the ranch.

    • Spread half of the buffalo chicken mixture over the noodles.

    • Add half of the creamy cheese mixture on top of the chicken.

    • Sprinkle 1/3 of the mozzarella and cheddar cheese blend.

    • (Optional) Drizzle a bit of buffalo wing sauce for extra heat.

    • Repeat layers: noodles, remaining chicken, remaining cheese mixture, cheese blend.

    • Top with the last 3 noodles, a final layer of ranch dressing, and the remaining mozzarella and cheddar cheese.

  5. Bake:
    Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10-15 minutes until cheese is bubbly and golden.

  6. Garnish & Serve:
    Sprinkle with remaining green onions and extra chopped celery if desired. Serve warm with ranch or blue cheese dressing on the side.
