Here’s a  Bruschetta Chicken Bake recipe — a flavorful, oven-baked dish that combines juicy chicken breasts, tomatoes, garlic, herbs, and melty cheese, all inspired by the classic Italian bruschetta topping.


Bruschetta Chicken Bake Recipe

Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon Italian seasoning

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

For the Bruschetta Topping:

  • 2 cups cherry tomatoes, halved (or 3–4 Roma tomatoes, diced)

  • 3 cloves garlic, minced

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons olive oil

  • ½ teaspoon salt (adjust to taste)

  • ¼ teaspoon black pepper

  • ½ teaspoon dried basil or 1 tablespoon fresh chopped basil

  • ½ teaspoon dried oregano

For Topping:

  • 1½ cups shredded mozzarella cheese (or Italian blend)

  • ¼ cup grated Parmesan cheese

  • Fresh basil, chopped (optional, for garnish)


Instructions

1. Preheat the oven

Preheat your oven to 375°F (190°C).


2. Season the chicken

  • Pat the chicken breasts dry with paper towels.

  • Rub each breast with a bit of olive oil, then season with Italian seasoning, salt, and pepper.

  • Arrange the chicken in a lightly greased 9×13″ baking dish.


3. Prepare bruschetta topping

  • In a bowl, combine the tomatoes, garlic, balsamic vinegar, olive oil, salt, pepper, basil, and oregano.

  • Stir well to coat the tomatoes evenly.

  • Let it sit for 5–10 minutes to marinate.


4. Assemble the dish

  • Spoon the bruschetta mixture evenly over each chicken breast.

  • Sprinkle mozzarella cheese and Parmesan on top of the tomato mixture.


5. Bake

  • Cover with foil and bake for 25 minutes.

  • Uncover and bake an additional 10–15 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C) and the cheese is melted and golden.


6. Garnish & serve

  • Let the dish rest for 5 minutes.

  • Garnish with freshly chopped basil or parsley if desired.

  • Serve with:

    • Garlic bread

    • A side salad

    • Pasta, quinoa, or rice


Optional Add-Ons

  • Add a layer of baby spinach or sautéed mushrooms under the bruschetta for extra veggies.

  • For extra crisp, top with buttered breadcrumbs in the last 5–10 minutes of baking.


Make-Ahead Tip

You can assemble the dish (up to the point before baking), cover, and refrigerate for up to 24 hours in advance
