Blueberry Overnight Weetabix

Ingredients:

  • 2 Weetabix biscuits

  • 1/2 cup fresh or frozen blueberries

  • 1/2 to 3/4 cup milk (dairy or plant-based)

  • 2 tablespoons Greek yogurt (optional, for creaminess and protein)

  • 1 teaspoon honey or maple syrup (optional, for sweetness)

  • A pinch of cinnamon (optional)

Instructions:

  1. In a bowl or jar, crumble the Weetabix biscuits.

  2. Add the milk, Greek yogurt, and honey/maple syrup if using.

  3. Stir in the blueberries and a pinch of cinnamon.

  4. Mix well, cover, and refrigerate overnight (or at least 4 hours).

  5. In the morning, give it a good stir. You can add extra milk if needed.

  6. Top with a few extra blueberries or nuts for crunch if you like.
