  • 4 large eggs (room temperature)

  • 1 cup (200g) granulated sugar

  • 1 cup (125g) all-purpose flour

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • 2 tbsp milk (optional, for extra moisture)

  • Pinch of salt

Optional Add-ins:

  • Lemon zest or orange zest

  • 1–2 tbsp melted butter or oil (for a richer texture)

  1. Preheat oven to 350Β°F (175Β°C). Grease and line an 8-inch (20 cm) round or square cake pan.

  2. Blend Wet Ingredients:

    • In a blender, add eggs, sugar, vanilla extract, and milk (if using).

    • Blend on high for about 2–3 minutes until light, pale, and frothy.

  3. Add Dry Ingredients:

    • Add flour, baking powder, and salt directly into the blender.

    • Pulse or blend on low just until combined. Do not overmix.

  4. Bake:

    • Pour batter into the prepared pan.

    • Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

  5. Cool:

    • Let it cool in the pan for 10 minutes.

    • Then remove and cool completely on a wire rack.
