Here’s a delicious, classic Cherry Pie Bars recipe for you! These bars have a buttery crust, a sweet cherry filling, and a crumbly topping — basically cherry pie in bar form. Perfect for potlucks or any sweet craving.


Best Cherry Pie Bars Recipe

Ingredients:

For the crust and topping:

  • 2 ½ cups all-purpose flour

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • 1 cup (2 sticks) unsalted butter, cold and cubed

  • 1 cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

For the cherry filling:

  • 2 cans (21 oz each) cherry pie filling (or about 3 cups homemade cherry pie filling)


Instructions:

  1. Preheat the oven to 350°F (175°C). Grease or line a 9×13 inch baking pan with parchment paper.

  2. Make the crust and topping:
    In a large bowl, whisk together flour, baking powder, and salt.
    Add the cold cubed butter and use a pastry cutter or your fingers to blend until the mixture looks like coarse crumbs.
    Stir in sugar, egg, and vanilla extract. Mix until combined — the dough will be crumbly.

  3. Press about 2/3 of the dough evenly into the bottom of the prepared pan to form the crust.

  4. Spread the cherry pie filling evenly over the crust.

  5. Crumble the remaining dough over the cherry filling to form the topping.

  6. Bake for 45–50 minutes or until the top is golden brown and the filling is bubbly.

  7. Cool completely before cutting into bars.


Tips:

  • For extra flavor, add a teaspoon of almond extract to the filling.

  • You can also sprinkle a bit of coarse sugar on top before baking for a crunchy finish.

  • These bars keep well covered at room temperature for a few days or in the fridge for about a week.
