Beef Tips with Gravy

Here’s a simple and delicious Beef Tips Recipe with a savory gravy – perfect over mashed potatoes, rice, or egg noodles.


Classic Beef Tips with Gravy

Ingredients:

  • 2 lbs beef stew meat or sirloin tips, cut into 1-inch cubes

  • 2 tbsp vegetable oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 2 cups beef broth (low sodium)

  • 1 tbsp Worcestershire sauce

  • 1 tbsp soy sauce

  • 1 tsp dried thyme (or Italian seasoning)

  • 1 bay leaf (optional)

  • Salt and pepper to taste

  • 2 tbsp cornstarch + 3 tbsp cold water (for slurry)

  • Optional: Mushrooms, sliced (1 cup)

Instructions:

  1. Brown the Beef:
    Heat oil in a large skillet or Dutch oven over medium-high heat. Season the beef with salt and pepper. Sear the beef in batches until browned on all sides. Remove and set aside.

  2. Sauté Aromatics:
    In the same pan, reduce heat to medium. Add onions (and mushrooms if using) and cook until softened, about 5–6 minutes. Add garlic and cook for 30 seconds more.

  3. Deglaze and Simmer:
    Return beef to the pan. Add beef broth, Worcestershire sauce, soy sauce, thyme, and bay leaf. Scrape up any browned bits from the bottom. Bring to a simmer.

  4. Cook:
    Reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is fork-tender. Stir occasionally and add a bit more broth or water if needed.

  5. Make Gravy:
    Mix cornstarch and cold water in a small bowl. Stir into the simmering beef mixture. Cook for 2–3 minutes until the gravy thickens. Remove bay leaf if used.

  6. Serve:
    Serve hot over mashed potatoes, buttered egg noodles, or rice. Garnish with fresh parsley if desired.
