Classic Beef Tips with Gravy
Ingredients:
-
2 lbs beef stew meat or sirloin tips, cut into 1-inch cubes
-
2 tbsp vegetable oil
-
1 medium onion, diced
-
2 cloves garlic, minced
-
2 cups beef broth (low sodium)
-
1 tbsp Worcestershire sauce
-
1 tbsp soy sauce
-
1 tsp dried thyme (or Italian seasoning)
-
1 bay leaf (optional)
-
Salt and pepper to taste
-
2 tbsp cornstarch + 3 tbsp cold water (for slurry)
-
Optional: Mushrooms, sliced (1 cup)
Instructions:
-
Brown the Beef:
Heat oil in a large skillet or Dutch oven over medium-high heat. Season the beef with salt and pepper. Sear the beef in batches until browned on all sides. Remove and set aside. -
Sauté Aromatics:
In the same pan, reduce heat to medium. Add onions (and mushrooms if using) and cook until softened, about 5–6 minutes. Add garlic and cook for 30 seconds more. -
Deglaze and Simmer:
Return beef to the pan. Add beef broth, Worcestershire sauce, soy sauce, thyme, and bay leaf. Scrape up any browned bits from the bottom. Bring to a simmer. -
Cook:
Reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is fork-tender. Stir occasionally and add a bit more broth or water if needed. -
Make Gravy:
Mix cornstarch and cold water in a small bowl. Stir into the simmering beef mixture. Cook for 2–3 minutes until the gravy thickens. Remove bay leaf if used. -
Serve:
Serve hot over mashed potatoes, buttered egg noodles, or rice. Garnish with fresh parsley if desired.
