🍌 Banana Split Cheesecake Cake Recipe

Components:

  1. Banana Cake layers

  2. Strawberry Swirl Cheesecake layer

  3. Chocolate Ganache

  4. Whipped cream, cherries, and toppings (like nuts and sprinkles)

📝 Ingredients

For the Banana Cake (2 layers):

  • 2 cups mashed ripe bananas (about 4)

  • 1 ½ tsp baking soda

  • 3 cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp salt

  • ¾ cup unsalted butter, softened

  • 1 ½ cups granulated sugar

  • 3 large eggs

  • 1 tsp vanilla extract

  • 1 cup buttermilk

For the Strawberry Swirl Cheesecake:

  • 16 oz (2 packages) cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup sour cream

  • ½ cup strawberry preserves or sauce (swirled)

For the Chocolate Ganache:

  • 1 cup heavy cream

  • 8 oz semi-sweet chocolate, chopped

Toppings:

  • Whipped cream

  • Maraschino cherries

  • Chopped peanuts or walnuts

  • Sprinkles

  • Sliced bananas (fresh, added just before serving)

👩‍🍳 Instructions

1. Make the Cheesecake (first):

  1. Preheat oven to 325°F (163°C). Line a 9-inch springform pan with parchment on the bottom.

  2. Beat cream cheese until smooth, then add sugar and mix until fluffy.

  3. Mix in eggs, one at a time, then vanilla and sour cream.

  4. Pour into pan, then dollop strawberry preserves and swirl with a knife.

  5. Bake 45–55 min, or until center is set.

  6. Cool completely, then freeze for at least 2 hours or until firm.

2. Make the Banana Cake Layers:

  1. Preheat oven to 350°F (177°C). Grease and line two 9-inch round cake pans.

  2. Mix mashed bananas and baking soda; set aside.

  3. Whisk flour, baking powder, and salt.

  4. In a large bowl, cream butter and sugar until fluffy.

  5. Add eggs, one at a time, then vanilla.

  6. Mix in banana mixture, alternating with buttermilk and flour mixture.

  7. Divide batter between pans and bake 25–30 min.

  8. Let cool completely.

3. Make Ganache:

  1. Heat cream until steaming (not boiling), then pour over chopped chocolate.

  2. Let sit 2 min, then stir until smooth. Let cool to slightly thickened, pourable state.

4. Assemble the Cake:

  1. Place one banana cake layer on a plate.

  2. Top with the strawberry swirl cheesecake layer.

  3. Add the second banana cake layer.

  4. Pour chocolate ganache over the top, letting it drip down the sides.

  5. Chill for 30 min to set.

5. Decorate:

  • Pipe whipped cream around the edges.

  • Add cherries, sprinkles, chopped nuts, and banana slices before serving.

🍰 Tips:

  • Freeze the cheesecake layer ahead for easier stacking.

  • Assemble the cake cold, then bring to room temp before serving for best texture.

  • Only add fresh banana slices just before serving to avoid browning.
