Banana Bread Cake

Here’s a Banana Bread Cake with Cream Cheese Frosting recipe that combines the moist richness of banana bread with the soft, tender crumb of a cake—all topped with a luscious cream cheese frosting.


🍌 Banana Bread Cake

Ingredients:

  • 1 ½ cups mashed ripe bananas (about 3–4 bananas)

  • 2 teaspoons lemon juice

  • 2 ½ cups all-purpose flour

  • 1 ½ teaspoons baking soda

  • ¼ teaspoon salt

  • ¾ cup unsalted butter, softened

  • 2 cups granulated sugar

  • 3 large eggs

  • 2 teaspoons vanilla extract

  • 1 ½ cups buttermilk

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

  2. Mix bananas and lemon juice in a small bowl. Set aside.

  3. In another bowl, whisk flour, baking soda, and salt.

  4. In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well. Mix in vanilla.

  5. Alternate adding the flour mixture and buttermilk to the butter mixture. Start and end with flour.

  6. Fold in the mashed bananas.

  7. Pour batter into prepared pan and smooth the top. Bake 45–50 minutes or until a toothpick comes out clean.

  8. Cool completely in the pan before frosting.


🍰 Cream Cheese Frosting

Ingredients:

  • 8 oz (1 package) cream cheese, softened

  • ½ cup (1 stick) unsalted butter, softened

  • 4 cups powdered sugar

  • 1 teaspoon vanilla extract

  • Optional: a pinch of salt or 1–2 tablespoons heavy cream for consistency

Instructions:

  1. Beat cream cheese and butter together until smooth.

  2. Add vanilla and mix well.

  3. Gradually add powdered sugar until desired sweetness and thickness is achieved. Add cream for a fluffier texture, if needed.

  4. Spread over cooled banana bread cake.


🥄 Tips:

  • Add chopped walnuts or pecans to the batter for extra texture.

  • Sprinkle a bit of cinnamon or nutmeg into the frosting for a warm spice twist.

  • Store in the fridge due to the cream cheese, but bring to room temp before serving for best texture.
