📝 Ingredients:

  • 4 large russet potatoes, washed and cut into wedges (about 8 per potato)

  • 1/4 cup olive oil

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp smoked paprika (optional, for extra flavor and color)

  • 1/2 tsp dried oregano

  • 1/2 tsp dried thyme or Italian seasoning

  • 3–4 cloves garlic, minced (or 1 tbsp garlic paste)

  • 1/2 cup grated Parmesan cheese

  • Fresh parsley (optional, for garnish)

  • Extra Parmesan, for topping (optional)


🔪 Instructions:

1. Preheat and prepare

  • Preheat your oven to 400°F (200°C).

  • Line a large baking sheet with parchment paper or lightly grease it with oil or cooking spray.

2. Cut the potatoes

  • Scrub the russet potatoes well (leave the skin on for extra crispiness and nutrition).

  • Cut each potato in half lengthwise, then each half into 3–4 wedges depending on size.

3. Season the wedges

  • In a large bowl, mix:

    • Olive oil

    • Minced garlic

    • Salt, pepper

    • Garlic powder, onion powder

    • Paprika, oregano, thyme/Italian seasoning

  • Add potato wedges to the bowl and toss thoroughly until all pieces are coated evenly.

4. Add Parmesan

  • Sprinkle grated Parmesan cheese over the wedges and toss again to coat.

  • Make sure the cheese sticks to the oiled surface of the potatoes.

5. Arrange and bake

  • Place wedges skin-side down in a single layer on the baking sheet.

  • Bake in the preheated oven for 35–40 minutes, flipping halfway through for even browning.

    • The wedges should be golden, crispy, and tender when pierced with a fork.

6. Finish and serve

  • Remove from oven and, while hot, sprinkle with extra Parmesan and fresh chopped parsley if desired.

  • Serve warm with ketchup, garlic aioli, or your favorite dipping sauce.


🔄 Variations:

  • Use sweet potatoes for a slightly sweet, earthy version.

  • Add red pepper flakes for a spicy kick.

  • Replace Parmesan with nutritional yeast for a dairy-free option.
