Ingredients:

  • 4 cod fillets (about 6 oz each)

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 lemon (zested and juiced)

  • 1 teaspoon lemon zest

  • 1/4 teaspoon red pepper flakes (optional)

  • Salt and freshly ground black pepper, to taste

  • Fresh parsley, chopped (for garnish)

  • Lemon wedges (for serving)


Instructions:

  1. Preheat the oven to 400ยฐF (200ยฐC). Lightly grease a baking dish or line with parchment paper.

  2. Prepare the cod:

    • Pat the cod fillets dry with paper towels.

    • Place them in the baking dish in a single layer.

  3. Make the lemon-garlic mixture:

    • In a small bowl, combine olive oil, minced garlic, lemon juice, lemon zest, red pepper flakes (if using), salt, and pepper.

  4. Season the cod:

    • Pour the lemon-garlic mixture evenly over the fillets.

    • Gently rub the mixture onto the fish to coat it well.

  5. Bake:

    • Bake for 15โ€“20 minutes, or until the fish flakes easily with a fork. The exact time will depend on the thickness of your fillets.

  6. Garnish and serve:

    • Sprinkle with fresh chopped parsley.

    • Serve with lemon wedges on the side.
