Baked chicken with garlic and cherry tomatoes

Here’s a simple and delicious recipe for Baked Chicken with Garlic and Cherry Tomatoes:

Ingredients:

  • 4 bone-in, skin-on chicken thighs (or breasts if you prefer)
  • 1 pint of cherry tomatoes, halved

  • 4-5 garlic cloves, minced (or 2 tsp garlic powder)

  • 2 tbsp olive oil

  • 1 tsp dried oregano

  • 1 tsp dried thyme (optional)

  • Salt and pepper to taste

  • Fresh parsley or basil for garnish (optional)

  • 1/2 cup chicken broth or white wine (optional for more moisture)

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C).

  2. Prepare the chicken: Pat the chicken thighs dry with a paper towel. Rub them with olive oil and season with salt, pepper, oregano, and thyme. Place the chicken in a baking dish or on a sheet pan.

  3. Prepare the tomatoes: In a bowl, toss the halved cherry tomatoes with minced garlic, a drizzle of olive oil, salt, and pepper. You can also add a bit more oregano if desired.

  4. Assemble the dish: Scatter the garlic and tomato mixture around the chicken in the baking dish. If you like extra moisture, add a splash of chicken broth or white wine to the pan.

  5. Bake the chicken: Place the dish in the preheated oven and bake for 35-45 minutes (depending on the size of the chicken), or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy and golden. The tomatoes should soften and release their juices.

  6. Garnish and serve: Once done, remove from the oven and garnish with fresh parsley or basil. Serve the chicken alongside the roasted tomatoes, spooning any delicious juices over the top.
