🥭 Baked Mango Pie Recipe

📋 Ingredients
For the crust (or use a pre-made pie crust):

1 ¼ cups all-purpose flour

½ cup (1 stick) cold unsalted butter, cut into cubes

2–3 tbsp ice water

1 tbsp sugar

¼ tsp salt
For the mango filling:

2 to 3 ripe mangoes (about 2 cups chopped or sliced)

½ cup sugar (adjust to sweetness of mangoes)
-
1 tbsp cornstarch (or arrowroot powder)
-
1 tbsp lemon or lime juice
-
½ tsp cinnamon (optional)

1 tsp vanilla extract
🍰 Instructions
1. Make the Pie Crust

In a bowl, mix flour, sugar, and salt.

Add cold butter and cut in with a pastry cutter or fork until crumbly.

Add ice water gradually until the dough just comes together.

Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
2. Prepare the Filling

Peel and slice mangoes into small pieces.

In a bowl, combine mangoes with sugar, cornstarch, lemon juice, cinnamon (if using), and vanilla. Mix gently.
3. Assemble the Pie

Preheat oven to 375°F (190°C).

Roll out the chilled dough and place it in a 9-inch pie dish.

Pour the mango filling into the crust and spread evenly.

Optionally, add a lattice top or full crust topping (cut slits to vent).
4. Bake

Bake for 40–45 minutes or until the crust is golden brown and filling is bubbling.

If the edges brown too quickly, cover them with foil halfway through.
5. Cool and Serve

Let the pie cool for at least 1 hour before serving.

Serve plain or with a scoop of vanilla ice cream or whipped cream!
