Avocado Kiwi Salad

🥗 Avocado Kiwi Salad

Ingredients:

  • 2 ripe avocados, diced

  • 3 ripe kiwis, peeled and sliced or diced

  • 1 small cucumber, thinly sliced or diced

  • ¼ red onion, thinly sliced (optional for a bit of sharpness)

  • A handful of fresh mint or cilantro leaves (your choice), chopped

  • 1–2 tablespoons lime juice (freshly squeezed)

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • Optional: crumbled feta or goat cheese, or chopped toasted nuts (like pistachios or almonds)


Instructions:

  1. Prep the produce: Dice the avocado and kiwi, slice the cucumber and onion, and chop the herbs.

  2. Mix the dressing: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.

  3. Assemble: Gently toss the avocado, kiwi, cucumber, onion, and herbs in a large bowl.

  4. Dress and serve: Drizzle the dressing over the salad just before serving. Top with cheese or nuts if using.
