🥗 Avocado Kiwi Salad
Ingredients:

2 ripe avocados, diced

3 ripe kiwis, peeled and sliced or diced

1 small cucumber, thinly sliced or diced

¼ red onion, thinly sliced (optional for a bit of sharpness)

A handful of fresh mint or cilantro leaves (your choice), chopped

1–2 tablespoons lime juice (freshly squeezed)

Salt and pepper to taste

Optional: crumbled feta or goat cheese, or chopped toasted nuts (like pistachios or almonds)
Instructions:

Prep the produce: Dice the avocado and kiwi, slice the cucumber and onion, and chop the herbs.

Mix the dressing: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.

Assemble: Gently toss the avocado, kiwi, cucumber, onion, and herbs in a large bowl.

Dress and serve: Drizzle the dressing over the salad just before serving. Top with cheese or nuts if using.
