Here’s a delicious Apple Crisp Cheesecake recipe that combines creamy cheesecake, spiced apples, and a buttery oat crisp topping. It’s perfect for fall—or anytime you want something comforting and indulgent.

Ingredients

➤ For the Graham Cracker Crust:

  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • ½ cup unsalted butter, melted

➤ For the Cheesecake Filling:

  • 3 (8 oz) blocks cream cheese, softened

  • 1 cup granulated sugar

  • 3 large eggs

  • 1 tsp vanilla extract

  • ½ cup sour cream

➤ For the Apple Topping:

  • 2 cups peeled and diced apples (Granny Smith or Honeycrisp work well)

  • 2 tbsp granulated sugar

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • 1 tbsp flour

  • 1 tbsp lemon juice

➤ For the Crisp Topping:

  • ½ cup all-purpose flour

  • ½ cup old-fashioned oats

  • ⅓ cup brown sugar

  • ½ tsp cinnamon

  • ¼ cup unsalted butter, cold and cubed


Instructions

🔸 1. Prepare the crust:

  1. Preheat oven to 325°F (160°C).

  2. Mix graham cracker crumbs, sugar, and melted butter until evenly combined.

  3. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.

🔸 2. Make the cheesecake filling:

  1. Beat cream cheese until smooth.

  2. Add sugar and mix until combined.

  3. Mix in eggs one at a time.

  4. Add vanilla and sour cream; mix just until smooth.

  5. Pour over the cooled crust.

🔸 3. Make the apple topping:

  1. In a bowl, toss apples with sugar, cinnamon, nutmeg, flour, and lemon juice.

  2. Spoon evenly over the cheesecake batter.

🔸 4. Make the crisp topping:

  1. In another bowl, combine flour, oats, brown sugar, and cinnamon.

  2. Cut in cold butter with a fork or pastry cutter until crumbly.

  3. Sprinkle evenly over the apples.

🔸 5. Bake:

  1. Bake at 325°F for 60–70 minutes, or until the center is just slightly jiggly.

  2. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.

  3. Chill in the fridge for at least 4 hours, preferably overnight.


🍨 Serving Tip:

Drizzle with caramel sauce and a dollop of whipped cream for extra decadence!
