Here’s a flavorful and easy recipe for Fried Rice with Ground Beef and Vegetables—perfect for a weeknight dinner or using up leftovers!


Fried Rice with Ground Beef and Vegetables

Ingredients:

  • 2 tablespoons oil (vegetable, canola, or sesame)

  • 1 lb (450g) ground beef

  • 3 cups cooked rice (preferably day-old)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup frozen mixed vegetables (carrots, peas, corn, etc.)

  • 2 eggs, beaten

  • 3 tablespoons soy sauce (adjust to taste)

  • 1 tablespoon oyster sauce (optional for extra depth)

  • 1 teaspoon sesame oil (optional, for added aroma)

  • Salt and pepper, to taste

  • Green onions, chopped (for garnish)


Instructions:

  1. Cook the ground beef:

    • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.

    • Add the ground beef, season lightly with salt and pepper, and cook until browned. Break it up as it cooks.

    • Drain excess fat if needed. Remove beef and set aside.

  2. Cook the vegetables and aromatics:

    • In the same pan, add the remaining oil.

    • Add onion and cook until soft (2–3 minutes), then add garlic and cook until fragrant (30 seconds).

    • Stir in the mixed vegetables and cook until heated through.

  3. Scramble the eggs:

    • Push the veggies to one side of the pan. Pour in the beaten eggs on the other side.

    • Scramble until just set, then mix everything together.

  4. Add rice and beef:

    • Add the cooked rice and browned ground beef back to the pan.

    • Stir-fry everything together, breaking up clumps of rice.

  5. Season:

    • Pour in soy sauce, oyster sauce (if using), and sesame oil.

    • Stir well until rice is evenly coated and heated through.

  6. Serve:

    • Taste and adjust seasoning if needed.

    • Garnish with chopped green onions and serve hot.
