Possum Pie

Here’s a  recipe for Possum Pie, a classic Southern dessert that’s creamy, chocolatey, and deliciously layered. Despite the name, it doesn’t contain possum—it’s just a fun name!


Possum Pie Recipe

Ingredients

Crust:

  • 1 1/2 cups graham cracker crumbs (about 10-12 full sheets)

  • 1/4 cup granulated sugar

  • 1/3 cup unsalted butter, melted

Filling:

  • 8 oz cream cheese, softened

  • 1 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1 cup heavy whipping cream (or cool whip can be used as a substitute)

Chocolate layer:

  • 1 cup semisweet chocolate chips

  • 1/2 cup heavy cream (for ganache)

Topping:

  • 1 cup heavy whipping cream

  • 2 tablespoons powdered sugar

  • Chocolate shavings or cocoa powder (optional for garnish)


Instructions

  1. Prepare the crust:

    • Preheat oven to 350°F (175°C).

    • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter.

    • Press mixture evenly into the bottom of a 9-inch pie pan.

    • Bake crust for 8-10 minutes until lightly golden.

    • Remove from oven and let cool completely.

  2. Make the cream cheese layer:

    • In a large bowl, beat the softened cream cheese until smooth.

    • Add powdered sugar and vanilla extract; beat until well combined.

    • In a separate bowl, whip the heavy cream until stiff peaks form.

    • Gently fold the whipped cream into the cream cheese mixture.

    • Spread this layer evenly over the cooled crust.

  3. Prepare the chocolate ganache:

    • Place chocolate chips in a heatproof bowl.

    • Heat heavy cream in a small saucepan over medium heat until it just begins to simmer.

    • Pour hot cream over chocolate chips and let sit for 2 minutes.

    • Stir until smooth and glossy.

    • Allow ganache to cool slightly but still pourable.

    • Pour the ganache over the cream cheese layer and spread evenly.

  4. Make the whipped topping:

    • In a clean bowl, whip the heavy cream with powdered sugar until stiff peaks form.

    • Spread whipped topping over the chocolate layer.

  5. Chill and serve:

    • Refrigerate the pie for at least 4 hours or overnight to set completely.

    • Before serving, garnish with chocolate shavings or a dusting of cocoa powder if desired.


Notes:

  • You can substitute Cool Whip for the whipped cream layers for convenience.

  • The pie tastes best after chilling overnight.

  • This dessert is rich and creamy, perfect for chocolate lovers!
