Here’s a  recipe for No-Bake Peanut Butter Haystacks — a simple, delicious treat made with peanut butter, chocolate, and crunchy noodles or oats. Perfect when you want a quick, no-oven dessert!


No-Bake Peanut Butter Haystacks

Ingredients:

  • 1 cup creamy peanut butter

  • 1 cup semisweet chocolate chips (or milk chocolate chips)

  • 2 cups chow mein noodles (or you can use crispy rice cereal or rolled oats for a different texture)

  • 1/2 cup powdered sugar (optional, for extra sweetness and structure)

  • 1 teaspoon vanilla extract (optional)

  • Pinch of salt (optional, enhances flavor)


Instructions:

  1. Prepare a work surface:
    Line a baking sheet or large plate with parchment paper or wax paper. This is where you’ll drop the haystacks to cool and set.

  2. Melt the chocolate and peanut butter:
    In a microwave-safe bowl, combine the peanut butter and chocolate chips.

    • Microwave in 20-30 second intervals, stirring well between each, until the mixture is completely melted and smooth.

    • Alternatively, melt them together in a double boiler on the stove over simmering water, stirring constantly.

  3. Add powdered sugar and vanilla (optional):
    Stir in the powdered sugar and vanilla extract to the melted mixture if using. The powdered sugar helps the haystacks firm up better and adds a little extra sweetness.

  4. Mix in the crunchy noodles:
    Gently fold the chow mein noodles into the melted chocolate and peanut butter mixture. Stir carefully to coat all the noodles without breaking them too much.

  5. Form the haystacks:
    Using a spoon, scoop small piles of the mixture onto the prepared parchment paper.

    • Shape into little clusters or “haystacks.”

    • Space them out enough so they don’t stick together.

  6. Chill to set:
    Place the baking sheet in the refrigerator for about 1 hour or until the haystacks are firm and set.

  7. Serve and store:
    Once firm, transfer the haystacks to an airtight container.

    • Store them in the refrigerator for up to 1 week.

    • They can also be frozen for longer storage.


Tips & Variations:

  • Crunchy mix-ins: Add chopped peanuts, shredded coconut, or mini marshmallows for extra texture.

  • Chocolate drizzle: Melt some white chocolate or additional dark chocolate and drizzle on top for decoration.

  • Nut butter swaps: Try almond butter or sunflower seed butter instead of peanut butter.

  • Oats version: Use quick oats instead of noodles for a chewier haystack.
