Here’s a delicious and easy Steak Bites and Rotini in Garlic Parmesan Sauce recipe that’s packed with flavor and perfect for a weeknight dinner or a special occasion.


🥩🍝 Steak Bites and Rotini in Garlic Parmesan Sauce

🔹 Ingredients:

For the Steak Bites:

  • 1 lb (450g) sirloin or ribeye steak, cut into bite-sized cubes

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 2 cloves garlic, minced

  • Salt & pepper to taste

  • Optional: red pepper flakes, fresh parsley for garnish

For the Garlic Parmesan Sauce:

  • 2 tbsp butter

  • 4 cloves garlic, minced

  • 2 tbsp all-purpose flour

  • 2 cups milk (whole or 2%)

  • ½ cup grated Parmesan cheese (more to taste)

  • Salt and pepper to taste

For the Pasta:

  • 12 oz (340g) rotini pasta

  • Salt for pasta water


🔹 Instructions:

1. Cook the Pasta:

  • Bring a large pot of salted water to a boil.

  • Add rotini and cook until al dente, according to package directions.

  • Reserve ½ cup pasta water, then drain and set aside.

2. Cook the Steak Bites:

  • Pat the steak cubes dry and season with salt and pepper.

  • Heat olive oil in a large skillet over medium-high heat.

  • Add steak bites in a single layer (do in batches if needed). Sear for 2–3 minutes per side or until desired doneness.

  • In the last minute of cooking, add butter and minced garlic. Toss to coat.

  • Remove from pan and set aside.

3. Make the Garlic Parmesan Sauce:

  • In the same skillet (wipe out excess grease if needed), melt butter over medium heat.

  • Add garlic and cook for 30–60 seconds until fragrant.

  • Whisk in flour and cook for 1 minute to make a roux.

  • Gradually whisk in milk, stirring constantly to avoid lumps.

  • Simmer for 3–4 minutes until it thickens slightly.

  • Stir in Parmesan cheese until melted.

  • Season with salt and pepper to taste.

4. Combine:

  • Add cooked rotini to the sauce. If too thick, use reserved pasta water to loosen it.

  • Toss in the steak bites and any juices from the plate.

  • Stir to coat everything in the sauce.

5. Serve:

  • Plate the pasta and steak bites.

  • Garnish with more Parmesan, parsley, and a sprinkle of red pepper flakes if desired.


🔹 Tips:

  • For extra richness, add a splash of heavy cream to the sauce.

  • Substitute steak with chicken or shrimp if preferred.

  • Use freshly grated Parmesan for the best flavor and texture.
