Vegetable Soup

Here’s a simple and tasty Vegetable Soup recipe for you!


Classic Vegetable Soup

Ingredients:

  • 2 tablespoons olive oil

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 2 carrots, peeled and sliced

  • 2 celery stalks, sliced

  • 1 medium potato, peeled and diced

  • 1 zucchini, chopped

  • 1 cup green beans, trimmed and cut into pieces

  • 1 can (14.5 oz) diced tomatoes (with juice)

  • 6 cups vegetable broth (or water + bouillon)

  • 1 teaspoon dried thyme

  • 1 teaspoon dried basil

  • Salt and pepper, to taste

  • Fresh parsley or basil, for garnish (optional)


Instructions:

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until softened and fragrant (about 3-4 minutes).

  2. Add carrots, celery, and potato. Cook for another 5 minutes, stirring occasionally.

  3. Pour in the vegetable broth and diced tomatoes with their juice.

  4. Add green beans, zucchini, thyme, and basil. Bring the soup to a boil, then reduce heat to low and simmer for 20-25 minutes, or until all the vegetables are tender.

  5. Season with salt and pepper to taste.

  6. Serve hot, garnished with fresh parsley or basil if you like.
