🧁 Muffins That Taste Like Doughnuts

Ingredients

For the Muffins:

  • 1/2 cup (1 stick) unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1 large egg

  • 1 1/2 cups all-purpose flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1/4 tsp ground nutmeg (for that classic doughnut flavor)

  • 1/2 cup milk

  • 1 tsp vanilla extract

For the Topping:

  • 1/4 cup butter, melted

  • 1/3 cup granulated sugar

  • 1 tsp ground cinnamon


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.

  2. Cream the butter and sugar together in a large bowl until light and fluffy. Beat in the egg.

  3. In a separate bowl, whisk together the flour, baking powder, salt, and nutmeg.

  4. Add the dry ingredients to the creamed mixture alternately with the milk, starting and ending with the dry ingredients. Stir in vanilla extract. Don’t overmix—just until combined.

  5. Spoon the batter evenly into the prepared muffin tin (each about 2/3 full).

  6. Bake for 15–20 minutes, or until the tops are lightly golden and a toothpick comes out clean.

  7. Cool slightly in the pan for 5 minutes, then transfer to a wire rack.

  8. While warm, dip each muffin top in melted butter, then roll in the cinnamon sugar mixture until well coated.


🔄 Variations:

  • Add a spoonful of jam inside for a “filled doughnut” effect.

  • Use brown sugar instead of white for a deeper flavor.

  • Swap nutmeg for cinnamon or cardamom for a twist.
