Hillbilly Pie (Poor Man’s Pie)

here’s a classic version:


🍰 Hillbilly Pie (Poor Man’s Pie) Recipe

Ingredients:

  • 1 unbaked 9-inch pie crust (store-bought or homemade)

  • 1 cup brown sugar (light or dark)

  • 1/3 cup all-purpose flour

  • 1/4 teaspoon salt

  • 2 tablespoons butter (cut into small pieces)

  • 1 cup whole milk (or evaporated milk for a richer flavor)

  • Optional: cinnamon or nutmeg for topping


Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Place pie crust in a 9-inch pie dish and flute the edges.

  3. In a medium bowl, mix together:

    • Brown sugar

    • Flour

    • Salt

  4. Sprinkle the dry mixture evenly into the unbaked pie shell.

  5. Dot the top with pieces of butter.

  6. Slowly pour milk over the sugar mixture in the pie shell. Do not stir—just let it soak down on its own. This helps create a custard-like texture when baked.

  7. Optional: Sprinkle lightly with cinnamon or nutmeg for extra flavor.

  8. Bake for 45 to 50 minutes, or until the filling is set and the crust is golden brown. The center may jiggle slightly but will firm as it cools.

  9. Cool completely before slicing. Serve at room temperature or chilled.


📝 Notes:

  • It’s called “Poor Man’s Pie” because it uses no eggs, cream, or expensive ingredients.

  • For a twist, some people add a splash of vanilla extract or use maple syrup in place of some sugar.

  • Keeps well in the fridge for up to 3 days.
