Chicken and Broccoli Pasta

Chicken Broccoli Pasta is a delicious and nutritious dish that combines tender chicken, fresh broccoli, and pasta in a creamy or savory sauce. It’s quick and easy to make, and you can customize it with your favorite ingredients.

Here’s a simple recipe for Chicken Broccoli Pasta:

Ingredients:

  • 2 boneless, skinless chicken breasts (or thighs)

  • 2 cups broccoli florets (fresh or frozen)

  • 8 oz pasta (penne, rotini, or any kind you prefer)

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 cup heavy cream (or a lighter version like half-and-half or milk)

  • 1/2 cup grated Parmesan cheese

  • Salt and pepper to taste

  • 1 tsp Italian seasoning (optional)

  • Red pepper flakes (optional, for some heat)

  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the pasta:

    • Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente.

    • About 3 minutes before the pasta is done, add the broccoli florets to the pot to cook along with the pasta. Drain everything together and set aside.

  2. Cook the chicken:

    • While the pasta and broccoli cook, heat the olive oil in a large skillet over medium heat.

    • Season the chicken breasts with salt, pepper, and Italian seasoning. Add them to the skillet and cook for about 6-7 minutes per side, or until the chicken is cooked through (internal temperature of 165°F/75°C).

    • Remove the chicken from the skillet, let it rest for a few minutes, then slice it into thin strips or bite-sized pieces.

  3. Make the creamy sauce:

    • In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.

    • Pour in the heavy cream and bring it to a simmer. Let it cook for about 2-3 minutes, stirring occasionally.

    • Stir in the Parmesan cheese and cook until the sauce thickens. If the sauce gets too thick, you can add a little pasta water to adjust the consistency.

  4. Combine everything:

    • Add the cooked pasta and broccoli to the skillet with the sauce. Toss everything together until well coated.

    • Add the chicken back into the skillet and stir to combine. Taste and adjust seasoning with salt, pepper, or red pepper flakes if desired.
