Magic Tomato Salad

Posted on July 27, 2025

Here’s a Magic Tomato Salad recipe that’s bright, flavorful, and perfect for summer. The “magic” comes from a simple trick: letting the tomatoes marinate in salt to draw out their juices, which then becomes part of the dressing. 🌟

🍅 Magic Tomato Salad Recipe

Ingredients:

  • 4–5 ripe heirloom or vine tomatoes, sliced or chopped

  • 1 tsp sea salt (or to taste)

  • 1 small red onion, thinly sliced

  • 1 clove garlic, finely grated or minced

  • 1 tbsp red wine vinegar or balsamic vinegar

  • 3 tbsp extra-virgin olive oil

  • Freshly ground black pepper

  • Handful fresh basil leaves, torn

  • Optional: crumbled feta or fresh mozzarella, toasted pine nuts, or avocado slices

Instructions:

  1. Prep the Tomatoes:

    • Slice or chop the tomatoes and place them in a bowl.

    • Sprinkle with salt and let them sit for 15–20 minutes. This draws out the natural juices and enhances the flavor.

  2. Build the Magic Dressing:

    • Add the sliced red onion and minced garlic to the tomato bowl.

    • Pour in the vinegar and olive oil.

    • Gently stir to combine everything with the tomato juices — this is your naturally infused dressing!

  3. Finish & Serve:

    • Add black pepper and fresh basil leaves.

    • Taste and adjust salt/vinegar if needed.

    • Serve immediately or chill for up to 30 minutes to let the flavors deepen.

Serving Tips:

  • Serve with crusty bread to soak up the juices.

  • Great as a side for grilled meats, fish, or as a light lunch with burrata or chickpeas.
