🥔 Meat Stuffed Potatoes with Fresh Gravy

🧂 Ingredients

For the Stuffed Potatoes:

  • 6 large russet potatoes

  • 1 lb (450g) ground beef (or ground lamb, turkey, or pork)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1/2 tsp smoked paprika

  • 1/2 tsp ground cumin (optional)

  • Salt & pepper to taste

  • 1/4 cup chopped parsley or fresh herbs (optional)

  • 1/2 cup shredded cheddar or mozzarella (optional)

  • Olive oil for brushing

For the Gravy:

  • 3 tbsp unsalted butter

  • 3 tbsp all-purpose flour

  • 2 cups beef broth (or chicken/vegetable for a lighter version)

  • 1 tsp Worcestershire sauce

  • Salt & pepper to taste

  • Optional: dash of cream for richness


🔪 Instructions

1. Bake the Potatoes

  • Preheat oven to 400°F (200°C).

  • Scrub potatoes and prick them with a fork. Rub with a bit of olive oil and salt.

  • Bake on a tray for 45–60 minutes, until soft when pierced.

2. Prepare the Meat Filling

  • While potatoes are baking, sauté onion and garlic in a skillet until soft.

  • Add ground meat and cook until browned, breaking it up with a spoon.

  • Add paprika, cumin, salt, and pepper. Cook another 2–3 minutes.

  • Stir in parsley and set aside. Add cheese if using, once off heat.

3. Make the Gravy

  • In a saucepan, melt butter over medium heat.

  • Stir in flour and cook 2–3 minutes until golden (a roux).

  • Gradually whisk in broth, stirring constantly to prevent lumps.

  • Add Worcestershire, salt, and pepper. Simmer 5–8 minutes until thickened.

  • Add a splash of cream for extra richness (optional). Keep warm.

4. Stuff the Potatoes

  • Once potatoes are cool enough to handle, slice each lengthwise and scoop out most of the flesh, leaving a sturdy shell.

  • Mix the scooped potato flesh into the meat mixture (optional, for heartier filling).

  • Stuff the mixture back into the shells, piling high.

  • Sprinkle cheese on top if desired and place back in the oven for 10–15 minutes until golden.

5. Serve

  • Place stuffed potatoes on plates, spoon hot gravy generously over the top, and garnish with herbs if you like.


📝 Tips

  • Want to add veggies? Mix in cooked mushrooms, spinach, or bell pepper with the meat.

  • For a shortcut: Use pre-made gravy and microwave the potatoes, though the taste won’t be quite as rich.
