Creamy White Chicken Chili

Here’s a Creamy White Chicken Chili recipe that’s hearty, flavorful, and easy to make—perfect for a cozy dinner or game day!


🥣 Creamy White Chicken Chili

Serves: 6
Prep Time: 10 minutes
Cook Time: 30 minutes (or 6–8 hrs in slow cooker)


🧄 Ingredients:

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 2–3 cloves garlic, minced

  • 1 lb cooked shredded chicken (rotisserie chicken works great!)

  • 1 (4 oz) can diced green chiles (mild or hot)

  • 1 tsp ground cumin

  • 1 tsp dried oregano

  • ½ tsp chili powder

  • ½ tsp ground coriander (optional)

  • 1/4 tsp cayenne pepper (optional, for heat)

  • Salt & pepper, to taste

  • 2 (15 oz) cans white beans (like cannellini or Great Northern), drained & rinsed

  • 2 cups chicken broth

  • 1 cup frozen corn (optional)

🧀 For Creamy Finish:

  • 1 (8 oz) block cream cheese, softened and cubed

  • ½ cup sour cream (or Greek yogurt)

  • 1 cup shredded Monterey Jack or Pepper Jack cheese (optional, for extra creaminess)


🔥 Instructions:

1. Sauté Aromatics
In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and cook until softened, about 5 minutes. Stir in garlic and cook for 1 more minute.

2. Add Chicken & Spices
Stir in shredded chicken, green chiles, cumin, oregano, chili powder, coriander, cayenne (if using), salt, and pepper.

3. Add Beans & Broth
Add beans, chicken broth, and corn. Bring to a boil, then reduce heat and simmer uncovered for 15–20 minutes.

4. Make It Creamy
Reduce heat to low. Stir in cream cheese until melted and fully incorporated. Then mix in sour cream and shredded cheese. Stir until smooth and creamy. Simmer a few more minutes if needed, but don’t let it boil.

5. Taste & Adjust
Taste and adjust seasoning with more salt, pepper, or spice as desired.


🧂 Optional Toppings:

  • Sliced avocado

  • Chopped cilantro

  • Crushed tortilla chips

  • Lime wedges

  • Extra shredded cheese

  • Jalapeño slices


🥄 Slow Cooker Version:

  1. Add all ingredients except cream cheese, sour cream, and cheese to the slow cooker.

  2. Cook on Low for 6–8 hours or High for 3–4 hours.

  3. In the last 30 minutes, stir in cream cheese, sour cream, and shredded cheese.
