Pepper Steak in a Crock Pot

Here’s a delicious and easy Pepper Steak in a Crock Pot recipe — perfect for busy days when you want a flavorful, hearty meal ready with minimal effort.


Crock Pot Pepper Steak

Ingredients:

  • 1.5 to 2 lbs beef sirloin or flank steak, cut into thin strips

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 onion, sliced

  • 3 cloves garlic, minced

  • 1 (14.5 oz) can diced tomatoes (undrained)

  • 1/4 cup low-sodium soy sauce

  • 1 tablespoon brown sugar

  • 1 teaspoon ground ginger (or 1 tablespoon fresh grated)

  • 1 teaspoon black pepper

  • 1/2 teaspoon salt (adjust to taste)

  • 1 tablespoon cornstarch + 2 tablespoons cold water (for thickening)

  • Optional: crushed red pepper flakes for heat

  • Optional garnish: sliced green onions or sesame seeds

Instructions:

  1. Prep the beef:
    Slice steak into thin strips against the grain.

  2. Layer the ingredients:
    In the crock pot, add beef, bell peppers, onion, garlic, diced tomatoes (with juice), soy sauce, brown sugar, ginger, black pepper, and salt. Stir to combine.

  3. Cook:

    • Low: 6–7 hours

    • High: 3–4 hours
      Until the beef is tender and veggies are cooked but not mushy.

  4. Thicken the sauce (optional):
    In a small bowl, mix cornstarch and cold water. Stir into the crock pot about 30 minutes before serving. Let it cook until the sauce thickens.

  5. Serve:
    Over steamed rice, cauliflower rice, or noodles.


Tips:

  • For extra flavor, sear the beef in a skillet before adding to the crock pot.

  • Use different bell pepper colors for variety.

  • Add mushrooms or snow peas for extra veggies.
