Air Fryer Chicken Fajitas

Here’s a simple and delicious Air Fryer Chicken Fajitas recipe that’s quick and full of flavor!

Ingredients:

  • For the Chicken Marinade:

    • 2 chicken breasts (boneless, skinless)

    • 1 tbsp olive oil

    • 1 tsp chili powder

    • 1 tsp paprika

    • 1/2 tsp cumin

    • 1/2 tsp garlic powder

    • 1/2 tsp onion powder

    • 1/2 tsp dried oregano

    • Salt and pepper to taste

    • 1 tbsp lime juice

  • For the Fajita Veggies:

    • 1 red bell pepper (sliced)

    • 1 yellow bell pepper (sliced)

    • 1 medium onion (sliced)

    • 1 tbsp olive oil

    • Salt and pepper to taste

  • To Serve:

    • Tortillas (flour or corn)

    • Fresh cilantro (optional)

    • Lime wedges

    • Sour cream, guacamole, or salsa (optional)


Instructions:

  1. Marinate the Chicken:

    • In a bowl, combine olive oil, chili powder, paprika, cumin, garlic powder, onion powder, oregano, lime juice, salt, and pepper.

    • Slice the chicken breasts into thin strips and coat them in the marinade. Let it sit for 15-30 minutes (or you can marinate it longer if you have the time).

  2. Prepare the Veggies:

    • Slice the bell peppers and onion into strips.

    • Toss the veggies in olive oil, salt, and pepper.

  3. Preheat the Air Fryer:

    • Preheat the Air Fryer to 375°F (190°C) for about 3-5 minutes.

  4. Cook the Chicken:

    • Place the marinated chicken strips in the air fryer basket. Cook for about 10-12 minutes, shaking the basket halfway through for even cooking. The internal temperature of the chicken should reach 165°F (74°C).

  5. Cook the Veggies:

    • After the chicken is done, toss the sliced bell peppers and onions into the Air Fryer basket. Cook for another 5-7 minutes at 375°F, or until the veggies are tender and slightly charred.

  6. Assemble the Fajitas:

    • Warm the tortillas in the microwave or on a skillet.

    • Layer the chicken and fajita veggies on the tortillas.

    • Add your favorite toppings like sour cream, guacamole, salsa, or a sprinkle of fresh cilantro and a squeeze of lime.


Tips:

  • You can add some jalapeños to the veggie mix if you like extra heat.

  • To make it even easier, you can prepare everything ahead of time and marinate the chicken overnight.

  • If you want to serve it as a meal prep, you can store the cooked chicken and veggies in an airtight container in the fridge for up to 3 days.
