Cajun Chicken Pasta

Here’s a delicious and creamy Cajun Chicken Pasta recipe that’s perfect for a quick dinner or a flavorful weekend meal:


Cajun Chicken Pasta

Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts

  • 2 tbsp Cajun seasoning (store-bought or homemade)

  • 1 tbsp olive oil

For the Pasta:

  • 8 oz (225 g) fettuccine or penne pasta

  • 2 tbsp butter

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 small red onion, thinly sliced

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup chicken broth

  • ½ cup grated Parmesan cheese

  • Salt & pepper to taste

  • Chopped parsley (for garnish)

  • Optional: crushed red pepper flakes (for extra heat)


Instructions

  1. Cook the Pasta:
    Cook the pasta according to package instructions. Drain and set aside.

  2. Season and Cook the Chicken:

    • Rub chicken breasts with Cajun seasoning on all sides.

    • Heat olive oil in a large skillet over medium-high heat.

    • Sear chicken for about 5–6 minutes per side until golden and cooked through (internal temp: 165°F / 74°C).

    • Remove chicken from pan and let rest for a few minutes. Then slice into strips.

  3. Sauté the Veggies:

    • In the same pan, melt butter over medium heat.

    • Add bell peppers and onion. Sauté until soft (4–5 minutes).

    • Add garlic and cook for 1 minute more.

  4. Make the Sauce:

    • Pour in chicken broth and stir to deglaze the pan.

    • Add heavy cream and bring to a simmer.

    • Stir in Parmesan cheese. Season with salt, pepper, and red pepper flakes if using.

  5. Combine:

    • Toss in the cooked pasta and sliced chicken.

    • Stir until everything is coated in the sauce and heated through.

  6. Serve:

    • Plate up the pasta and garnish with chopped parsley and more Parmesan if desired.


Tips

  • For a lighter version, substitute half-and-half for the heavy cream.

  • Add mushrooms or spinach for more veggies.

  • Want it extra spicy? Add a dash of hot sauce to the sauce.
