Baked Cottage Cheese Eggs Recipe

Ingredients:

  • 4 large eggs

  • 1/2 cup cottage cheese (you can use full-fat or low-fat depending on your preference)

  • 1/4 cup shredded cheese (cheddar, mozzarella, or parmesan work well)

  • 1 tbsp olive oil or butter (for greasing the baking dish)

  • Salt and pepper, to taste

  • Optional: Chopped herbs (like parsley, chives, or dill)

  • Optional: Vegetables (like spinach, mushrooms, or bell peppers)

  • Optional: A pinch of paprika or red pepper flakes for some heat

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a small baking dish or individual ramekins with olive oil or butter.

  2. Mix the cottage cheese and eggs: In a medium bowl, whisk together the eggs and cottage cheese until well combined. Season with salt, pepper, and any optional spices or herbs.

  3. Add the filling (optional): If you’re using any veggies, sauté them lightly in a pan first, then fold them into the egg mixture. You can also add a bit of shredded cheese for extra flavor.

  4. Bake: Pour the egg mixture into your prepared baking dish. Sprinkle with the shredded cheese (if using) and bake for about 20-25 minutes, or until the eggs are set and the top is golden brown.

  5. Serve: Once baked, let it cool for a few minutes before slicing and serving. You can top it with more fresh herbs or a drizzle of hot sauce for extra flavor.
