6 large egg yolks

3/4 cup granulated sugar

1 cup mascarpone cheese (room temperature)

1 1/2 cups heavy cream

2 cups strong brewed coffee (cooled)

1 package of ladyfinger cookies (savoiardi)

Unsweetened cocoa powder (for dusting)

Dark chocolate shavings (optional)
Instructions:

Prepare the Cream Mixture:

In a mixing bowl, whisk the egg yolks and sugar together until thick and pale.

Add the mascarpone cheese to the egg mixture and beat until smooth.

In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully incorporated.

Prepare the Coffee Mixture:

Pour the cooled coffee into a shallow dish.

Assemble the Tiramisu:

Quickly dip each ladyfinger into the coffee, making sure they are soaked but not soggy.

Arrange a layer of soaked ladyfingers at the bottom of a dish (such as an 8×8 square pan).

Spread half of the mascarpone mixture on top of the ladyfingers.

Repeat the layers with the remaining ladyfingers and mascarpone mixture.

Cover the dish with plastic wrap and refrigerate for at least 4 hours (or overnight) to allow the flavors to develop.

Just before serving, dust the top with unsweetened cocoa powder and garnish with chocolate shavings if desired.
